Potato Kurma



Ingredients:

8 small potatoes
half onion
4 tomatoes
4 to 5 curry leaves
1 inch grated ginger
3 cloves of garlic
1 teaspoon coriander powder
1/2 teaspoon cumin powder
1/4 teaspoon turmeric powder
1/2 chili
asofeteida powder
red chili powder
mustard seeds
1/2 tsp garam masala
1 cup yogurt
1 tbsp besan powder
4 tsp oil

Procedure:

Put a pan on the stove. Heat the oil and add the cumin and mustard seeds. When they crackle, add hing, onions, ginger, garlic and chili. After the onions are browned, puree the tomatoes and add it in. Cook for some time. Add garam masala, coriander powder, cumin powder, turmeric, and chili powder. Cook one minute. Add cubed potatoes. Mix yogurt and besan. Pour it in. Cook.
Add salt. Cook. Garnish

దొండకాయ పచ్చడి Dondakaya pachadi

Ingredients:
2 handfuls dondakaya
1/2 onion
1 and 1/2 green chilis
3 red chilis
handful mint
1/2 inch ginger
2 cloves garlic
tempering - urad dal, channa dal, etc.
tamarind
3 cashews
1 tbsp dry coconut
Procedure:
Heat the oil. In this order add the tempering, cashews, ginger, garlic, red chili, green chili, onion. Add dondakaya, tamarind, salt, and everything else. Put on the lid. Cook it 3/4ths done. Cool it, and grind. Optional, add more coconut.
